How do you can bear meat? Like a stew?

Where I'm from we use bear meat mainly for sausages, sometimes stew.

Some people even know how to cure a bear prosciutto type ham, bud it's rare and expensive.

Yeah i just cut it up into chunks like stew meat, do the raw pack method. Just put the raw meat and a tiny pinch of salt in each jar. My parents have a very nice pressure cooker, so i just go to their place to do all of my canning. You can just eat the meat straight out of the jar if you want, comes out super tender, like eating pot roast.
