Yeah unfortunately the home freeze drying units are still quite expensive, and take up a decentish amount of space. I absolutely want one anyway though.
One thing that the article doesn't mention is how long the cycle runs, MRE Steve did an entire Thanksgiving dinner but it took him something like 3 days.

I have only done canning. Devoting all my time and energy for half a day with strict recipes is the process. With a freeze dryer dont you just put the stuff in and come back later?
Pretty much but it's not a matter of cycle time it's a matter of capacity, if you harvest a bunch of xxxxxx all at the same time you can can it all in about a day or two, with freeze drying most of xxxxxx would rot before you could finish the crop.
That being said, a combination approach would be the best of both worlds. FFS I would LOVE to be able to make my own MREs!!!
Pretty much. It does take a good amount of time and if you buy the smaller unit you won't be able to do a ton at once.
