TouchWiz is a heavy interface, many enthusiasts actually went ahead with custom ROMs (custom Android firmware) to get rid of the bloatware and TouchWiz to enjoy Samsung's good hardware with a software package they like.
I'd rather have too many than missing features.
But what exactly do you consider bloatware? (some examples)
Pre-installed apps are annoying. The real bloatware is: undeletable apps (like how I can only """disable""" the Fagbook app, but not uninstall it), in terms of the UI on mobiles a big role is battery usage without a clear benefit on the functionality side / excessive amount of unused functionality that can't be switched off.

I agree that those should be downloadable instead of pre-installed.

Disabling should actually completely suspend all activity from that app.
One needs root access to actually uninstall it. Yes, not great, but does not bother me nearly as much as missing functionality.
