The GMO foods are made to maximize yield/profit, and make the consumer addicted. We didn't always have year-round access to seasonal veggies & fruits, or eat more than 1-2 times per day.

The biggest problem with US wheat is Roundup. The ripe wheat is sprayed with it to turn it brown so it’s easier to harvest. Most of Europe has banned roundup and they don’t have the “gluten” allergies experienced here. Peoples aren’t allergic to gluten they’re allergic to roundup.
