TLDR; He won't tip if he orders standing up (fast casual, fast food, etc). To a degree it makes sense. I typically only tip somewhere like that if its a holiday and they are super busy since working days like that kind of suck.

I feel like the only way this tipping shit stops is if (at places where you pay before you get your product) when they turn the screen around, ask for a manager. When they come, tell them that you are canceling your order because it is unreasonable to ask for a tip at this kind of place, then walk out. If enough people do that, and their bottom line is hurt, shit will change very fast.
