I always wanted a system where your ballot had a serial number that you could look up and see if your ballot was recorded the way you voted.
You still need to be able to verify the count. Looking up your vote in some database (that might not even be used for counting) doesn't verify anything.

If you can look up all the votes you can verify the count.

So they insert lots of bogus votes that tip totals. Everyone can verify their own vote, and the count.

I can't think of a way to prevent that, even only allowing official paper ballots.
