The mice are bought from specialized corporations. Maybe they have only one line of mice with humanized ACE2 in their catalog. In this case it was just inevitable that the virus got specialized for exactly this ACE2.
It's also interesting that SARS-CoV-2 is LESS likely to mutate than influenza and other viruses.
This is the first and most important task if you crate any virus, you don't want to create an uncontrollable boomerang. I'm sure that SARS-2 isn't the first chimera virus they released into the wild and that they made field tests with inconspicuous viruses before to test the stability of their designs.

Maybe, but the affinity to ACE2 is not a proof because the destructive work of the vaccine-induced spike proteins is done without them binding to cells.

I don't think there was a weapon at all, they just want to hone their skills. With the DNA material they have collected they can assassinate targeted groups or just sterilize them. With the experience they have gained with the viral vector vaccines, they can change the DNA of humans with or without their consent. Transhumanists want to learn how to optimize their own DNA (longevity, ..) and they need billions of human lab rats for that (that's why the transhumanists don't just kill us as the eugenicists want to do).
