I always worry when I leave my crock on and go to work. And shit does anyone else find its way to much to crock something or make a casserole for one person? Dog gets my leftovers if its not to spicy.
I am probably stupid but I'll do a cook on low all day on a weekend, eat a serving for dinner, then leave it on warm the rest of the week and add a little water each day and eat a serving each day until it's gone

You could take it out. Put it in the fridge. then pull out a bowl and nuke it every day...

That's how they used to do it in the old days. Have a cauldron with stew on all the time, and just keep adding stuff to it. Dunno how long it an go like that before there are.. issues.
If it stays above 165 forever it would probably just end up having horrible texture
My standards are pretty low also, so is my taste really. Food is fuel but I always worry how long I should keep it.
I never leave it on when I will be gone more than 30 minutes. I'm not even comfortable for that duration. I don't leave anything on while I'm gone with the exception of ceiling fans and AC. I don't even charge devices while I'm away.
