You could make little skewers with it. Add different cheeses and pickles perhaps (maybe jalapenos)? Serve with mustards.

This sounds good. Never fried ring bologna. I'm thinking something like that, or kebab. Make some sort of mustard pan sauce

I was thinking cold like on a relish tray, but a kebab does sound good.
