They must not really ever stop growing as they age

Probably not - at least not for a long time. Lobsters are like that, as well. They'll keep growing and live for decades. Sadly, the giant ones are mostly gone due to putting too much pressure on the fisheries.

I think it's only the females that people really want. They want the eggs for caviar.

I'm not sure if they even eat the males, or if they're trophy fish? I dunno. Do they eat 'em where you are? (I've never fished for them.)
