The problem is finding a way to fry it without poisoning yourself. Pretty much all the "vegetable" oils become toxic soup when heated. Lard or tallow would be safe, but I don't know if they'd make good fried chicken.

Olive oil is ok, but definitely less healthy than a fully saturated fat like lard or tallow. You could always use organic refined coconut oil too. It's cheap, has zero flavor, and is 100% saturated fat (which means it doesn't oxidize when heated).
